A fresh and crispy natural sparkling wine made out of Macabeu grapes. Balanced notes of nuts and pastry with well-integrated minerality. A complex, yet surprisingly easy-to-drink and elegant pet-nat.
Description
Spontaneous fermentation of 4-5 days, and then bottled with residual sugar in order to favor refermentation. Aging on its lees for 13 months, and disgorging in October of the year following the harvest. Excellent wine as an aperitif, with light first courses and fish-based main courses. Natural, organic, and unfiltered.
