Description

The Clot de Les Soleres winery is located in the Catalonia region, an area that has always been suited for viticulture. Since 2000, the owners of the estate have decided to renovate the estate and convert to an organic regime to better respect the territory. 

Pinot Noir Ancestral comes from the vinification of native grapes of the area. The vine parcels are rooted in a terroir of calcareous origin with a strong presence of clay, silt, and gravel. The vines enjoy excellent exposure to the sun, at about 250-350 meters above sea level. The vignerons of the estate decide to follow a completely naturalbiodynamic, and certified organic production and agricultural style

In the vineyard as in the cellar, we work only by hand, without the use of invasive machinery or chemical products. The plants are never watered, not even in the hottest months; this forces the roots to go deeper and obtain grapes richer in minerals. The wines are the result of painstaking work and no filtration and clarification. The grapes destined for the vinification of Pinot Noir Ancestral are harvested by hand in wooden boxes, pressed, and left to ferment spontaneously with only indigenous yeasts in stainless steelThe must still in the fermentation phase is bottled with a high percentage of sugar. The wine rests for about 13 months in the bottle and then disgorged towards the following year. 

In the glass Pinot Noir Ancestral is bright rosé with a buttery foam. On the nose, the bouquet ranges from small red fruits, cherries, wild strawberries, and mineral notes. When tasted we find a fresh wine, mineral, with good acidity and a lively bubble. We recommend tasting this wine with typical Iberian cured meats, savory cheesesgrilled red meats, or spicy dishes. Also excellent with savory first courses.
